A Jubilee Jamboree

We are very lucky in Heathfield, where I live, to have some very talented entertainers locally. Rag 'n Bone man lives here and gigs occasionally.


At the town party yesterday, amongst other things, we were entertained by Elvis. He has a very good voice!

And the wonderful Sway Allstars. Our glamorous community choir master, Angela, is a member. They really rock it out!

It was lovely to mingle with my fellow residents, enjoy a hog roast roll, jig to the music and enjoy the sun shine.


We had some beautiful vintage vehicles to admire, including this beauty, and a tank! It was enormous close up, quite intimidating really.

New Recipes

I picked up some bread from the community larder last week. A loaf was milk bread, but the slices are extremely thin, so I started thinking what I could do with it.


I didn't want to make breadcrumbs, as I already have quite a few of those in the freezer.


So I fell to thinking about savoury bread and butter puddings. I quite fancy a version using a tin of sardines in tomato sauce, with frozen spinach. Or puréed pea and lemon zest. Some kind of tomato one, not sure how I would do that yet. Sweetcorn perhaps, curried carrot. Definitely a mushroom one. Perhaps a ham and mushroom one, or chicken and mushroom. I seem to like the idea of mushrooms with this don't I!


I get recipe inspiration from all kinds of different places, sometimes just a very thinly sliced loaf, like today!



Also this week, I've been experimenting with fried leftover pasta. I'd read some time ago about it, although most of the things I've seen have been frying very lightly coated tomato sauce pasta.

I wanted to see if I could make something nice with the minimum of ingredients. So after having some leftover spaghetti one day, I tried that. Put some olive oil in a pan, and put a portion of spaghetti in, just as it was. Fried it gently until it was golden brown and tried flipping it over. It had stuck itself together, so was a nice saucer sized patty at this point. Fried this side also until golden, then tried it. Yum! Much more than the sum of its parts, this is a glorious thing.


It would make a good basis for many things. Use as the carb element with something. Or make it into a meal, which is what I was thinking off, by adding something. I'm not sure what or how yet, as the crispyness is an integral part of the appeal, and some kind of sauce, or anything wet would ruin that.


I'll think on.




What I've been making in previous Junes

Time for Ice Cream?

I make ice cream using double cream, condensed milk and thick Greek yogurt. Just stir it together, flavour and pop in the freezer. No need to keep beating it.

The simplest one of all is a pot of double cream, whipped, and a jar of good jam stirred through.

All the ice creams can be used as a mousse as well. My husband particularly likes the chocolate one.

It's not really ice cream weather today, but we are enjoying some beautiful weather lately, so have some ready to go in the freezer!

Throw some homemade sausages on the barbie

I like sausages, but I'm less keen on all the additives etc that are in them. So I sometimes make some using pork mince. Just squish everything together and shape into sausage shapes, or patties. Freeze well too, and can be made gluten free.

Chicken Liver Parfait

Chicken livers are usually pretty cheap. I like to use them to make this parfait. Very useful for lunches with crudités, or breakfast on toast.

An e-book

I published an ebook for meal plan 1 in August and am delighted that many people have thought it was worth getting.

I've managed to get my head around WooCommerce so I can feature it on the blog and you can find it here.


I'm busy recooking, photographing and updating the recipes for Meal Plan 2 and putting them into an ebook. It was written in 2013 and still prices up, which is fabulous. But the posts are embarrassingly bad and need a lot of updating! I'm getting on well with them again, having taken a break to do other things. It's taking me ages to do this one!


Do come and say hello on the Fantastically Frugal Food Facebook group, or the Sensational Slimming Sustenance group. I'd love to see you. Lots of useful tips, recipes and ideas. The over 17,000 membership are brilliant, brimming with talent.
