The weather doesn't know whether to be sunny or wet, and it can change in the blink of an eye. But May is nearly here, and I can feel summer on its way! The garden is looking gorgeous, I have tomatoes and beans sprouting and I can't wait to get them in the garden.
Here are a few recipes for lunches, weekend baking and everyday essentials - hope you like them!
Chocolate Muffins
Mike was ‘needing some chocolate’ yesterday, so I decided to make some chocolate muffins. Haven’t made any kind of muffins for yonks. They are super easy in that it is just a bit of stirring, and not too much of that either or the the cake will be tough.
They are soft and utterly delicious!
Chicken Liver Parfait
Wondering whether to call this a chicken liver pate or a chicken liver parfait, I looked up parfait and found that it is described as a very smooth and rich pate. So chicken liver parfait it is. Parfait sounds more luxurious and more expensive too!
It is very simple to make, not taking very long at all. You really need to whizz it with a stick blender or processor to get a richly smooth finish. If you don’t have either, cook the livers through as in the recipe, then fish them out and give them a good old chop on a board. You won’t get the super smoothness of a parfait, but you will get an extremely tasty pate
Weekend Baquette Recipe
The weekend is coming up and these crunchy, chewy baquette are perfect for a weekend project. They take a long elapsed time, but there is very little actual work involved.
Chicken with Butter and Squash and Pesto Tart
These chicken and roasted pumpkin tarts are quick to assemble once you have roasted the pumpkin or butternut squash. A tasty dinner with a little salad of whatever you have handy, and you can have any extra ones in your lunchbox the next day.
The chicken and pesto tarts are part of a series, starting with a poached chicken, to stretch the chicken to last a family of four all week. Twenty eight portions!
