Thoughts on Lions and Lambs, Free books, Plus Pi Day Pie

March has come in like a lion, and is currently pretending to be a lamb. We'll see what animal it chooses to manifest as in a few days...
This lion/lamb March has been true for me not only in the weather, but in my personal life as well. I am very delicately (aka nervously) going back to school. This semester, I took an anatomy and physiology class, which I naively thought would just take a few hours a day. It was an 8-week course (so a 16-week course done in 8 weeks, which meant a couple hours of class a day plus a whole lot of studying). It ended last week (I did well!) and I could finally breathe again.
I made a nice meal. I took a nap. I even scrolled and completely vegged out for a bit. The little things.
And I noticed I had stopped celebrating the little wins and successes in my writing life. Why do we do that? Why do we stop celebrating the successes when it starts to feel normal to publish a book. Publishing a book is a HUGE deal!!!
Speaking of books, in keeping with my promise this year to bring the world my books at the lowest cost possible, because I just want them to get into people's hands, I've made all my first-in-series free on all platforms (Kindle, Kobo, Nook, Apple, etc.) free! Now for pie.
Because it's Pi Day on Friday.
In case I haven't overshared enough today, I've been doing an elimination diet to see if it helps with the Hashimoto's I got diagnosed with last year (oh, the joy!). So I've eliminated gluten, dairy, and eggs (did I mention joy... she said sarcastically). This has required me to be a bit more creative in my cooking choices. Though it has led me to some truly amazing recipes. This is one of them. Dense, creamy, perfect. Does not taste like the type of pie one would eat on an elimination diet. It tastes so so good and is.... well, the word 'healthy' is a stretch, but it's definitely healthi-er. Enjoy!
Gluten-free, Dairy-free, Egg-free Chocolate Pie that tastes freaking amazing:
400 grams (this is most of a 10-ounce bag) dairy-free chocolate chips (I used Guitard, 60% because I like dark chocolate; you can absolutely do semisweet instead)
1 can full-fat coconut milk
1/2 C peanut butter
2 Tbsp cocoa
1 tsp vanilla
1/4 tsp salt
For the crust, I made a nut crust:
2 C nut of your choice (I used pecans)
2 Tbsp sugar
2 Tbsp coconut oil
For the Crust:
Prepare the crust by crushing the nuts in a blender or food processor. Add sugar and melted coconut oil. Press into a pie pan. Bake for 10-12 minutes at 350 degrees. Let it cool, at least most of the way, while you prepare the pie.
For the Pie:
Melt chocolate chips and coconut milk in the microwave in 30 second intervals until thoroughly melted.
Add peanut butter, cocoa, vanilla, and salt. Whisk or blend so this is smooth.
Pour into prepared crust. Then put in the refrigerator until set (4-6 hours). I like to give mine a jump start and pop it in the freezer for an hour and then put it in the refrigerator for 1-2 hours. I'm impatient like that.
