We have noticed that many local spots are now ordering Chicken Salad in big 5 lb. tubs from food suppliers-and we all know that means: Nasty Preservatives.

Here at the Fontainebleau Diner:

We gently simmer skinless, boneless chicken breast in water for an even cook. Once it cools, we cut it into hearty chunks, stir in mayo and spices, and give it a good mix. That's it. Next stop is at your table!
