Day 10: The "Glu" In Gluten

image

Hi ,

Walking past a coffeeshop chalkboard, I couldn't help but smile:

"There is no bad day that a pastry can't make better."

Truer words never spoken.

Bread, pastry, cakes, cookies, croissants, cinnamon rolls. Warm out of the oven, with a cup of tea of coffee....they scream comfort. And what about a beautiful pile of fresh pasta, steaming and covered in sauce? Gluten pulls us in with its warmth and charm.

There s no such thing as a bad food - this health coach has lasagna and pasta and warm baguette with balsamic when she goes out for Italian. But the "glu" in gluten is worth taking a miss for the next month.

Why? If you want a quick read from Harvard University, click here.

Gluten-filled foods raise our insulin levels up quickly. Remember the Glycemic Index? All those gluten-rich foods are pretty high up. When we take a break from gluten, and focus on fibre, protein and healthy fats, we let our microbiome feed on all of the wonderful things that make our gut run smoothly.

What is fundamentally important is that you are not cutting out carbohydrates on the Healthy Six. We eat quinoa, brown and wild rice, sweet potatoes, squash, oats - complex carbohydrates are good for us.

The "Glu" in Gluten is real: Too much of it can make us bloated and heavy.

But fear not - we have an 80/20 lifestyle awaiting us and if your true love is bread, you will be back together again soon.
