Between the Pages

Hi


I missed a newsletter last week, not because I was ignoring you all, but because I was on-board the Coral Geographer, doing a cruise of the Wild Islands of South Australia.


This was not the sort of cruise where you sit by the pool sipping cocktails. It was an expedition ship, and every day we were loaded onto tenders and sent to shore to explore the various islands we passed, and to check out the wildlife.Some of that was planned, as in there were lots of seals, sea lions, dolphins and seabirds, and some was not so planned, as in a few black tiger snakes. This warm time of year is when they all wake up.

This is the ship I was on. Not too big, which is how I like it. We also visited an oyster farm, had tastings with some abalone fishermen, and gin tastings where the flavouring ingredients were local bush foods. It is no wonder I arrived home a little heavier than when I left.


I managed to do some writing in quieter moments on board, and Return to Sandy Bay, book 2 in the Sandy Bay series, is progressing nicely. Pre-orders are registered on the Amazon website, so I need to finish it soon.

Escape to Sandy Bay

It's the right weather for sipping cocktails near the water. Even better if you have a book in hand. I swam at some beautiful beaches with that coloured water last week - absolutely stunning! Sandy Bay could be just the same.

Christmas Cheer

With the big day approaching, I have been thinking about what I will bring to the Christmas table. In Australia, we tend to have a cold lunch, rather than the roast turkey, etc. that people eat in the northern hemisphere. Seafood features strongly, as do a range of salads.


Berry and Meringue Ice-cream Cake is high on my list of potential deserts.It looks yum and is so simple to make..

Ingredients

2 litres vanilla ice-cream (can be low fat if you want)

500g mixed berries, fresh or frozen

100g packet pavlova nests, crushed (meringues)

White chocolate curls (optional) to serve

Icing sugar mixture to dust

Mixed berries, extra, to serve


Method.

Grease a 23cm round springform pan. Line the base and side with baking paper. Place ice-cream in a large bowl. Stand for 10 minutes or until just starting to soften. Add berries and meringue. Stir well to combine.


Spoon mixture into prepared pan. Level the top. Cover surface with plastic wrap. Freeze for six hours or overnight, or until firm. Remove cake from pan and place on a plate. Top with chocolate curls (if using) and extra berries. Serve immediately dusted with icing sugar.


Option: Add rose water, orange water, or similar flavouring to the ice-cream.

Jacinta had loved spending holidays with her aunt in Pt Reilly. Her aunt was an artist, and they often wandered up and down the coastal area, while Cynthia worked on her latest seascape and Jacinta swam or collected shells.
