Well, another year has rolled by - yes a birthday. it was a busy day but I shared it with some of my nearest and dearest, and for afternoon tea, I decided to try my hand at making a red velvet cake. I'd looked over the recipe and decided it couldn't be that hard. Making the cake wasn't too difficult, but icing it certainly was. I think the recipe was lacking something - perhaps a little corn flour to give it stability. Also, the crumb mix wasn't fine enough.

Perhaps you have a recipe you can share, or at least a few tips.
