Wine & Sewage; Science & Fantasy

Dear reader,
My lovely wife once shared a striking piece of wisdom with me: "A drop of wine in a barrel of sewage is sewage, but a drop of sewage in a barrel of wine is ALSO sewage." Some things just have a remarkable capacity to taint, don't they?
You may now be asking, what in the world does any of this have to do with fantasy books? Well, I'll tell you.
As a young author, I foolishly believed that science fiction and fantasy were basically the same thing. Both were nerdy. Both had lots of world-building. Obviously the same things, right?
Boy was I wrong.
The more I've talked to fellow readers, the more I've discovered that people are quite particular about what goes into their books. And some readers, I've learned, can be deeply offended when the peas roll into their mashed potatoes.
In general (and you let me know if I'm wrong about this) I've found that fantasy readers tend to be quite forgiving of some science in their fantasy. Wizards on spaceships? Bring it on. Exact chemistry required for brewing potions? Makes sense to me.
But Sci-Fi readers? O-o-o-h no. They want ZERO magic in their science fiction. They want cut and dried, grounded in reality, magic-free science. Anything else is sewage tainting the wine.
