Who loves the 4th July? Spoiler alert: I do!

Howdy y'all,


I know what you're gonna say... I'm not American and I have no business celebrating the 4th. And you're right, I'm not and I don't. However, my little boy is American and for those of you who were here last year listening to me waxing lyrical and wailing about how I didn't get to celebrate - you already know how much I love the 4th.


When we left the US in 2016, we were resolved to take at the very least July 4th and Thanksgiving celebrations with us. Even if it's just the three of us in house making smores over our gas stove top.


The first year we were back in Ireland was amazing, we had a huge outdoor party complete with a bounce house/bouncy castle and a big cook-out, and as much as I'd love to do that again this year, I really, really. wouldn't. The idea alone makes me feel sick.


Thankfully I have a lovely friend who is letting me invade her yard for a bbq on the 4th, otherwise I'd be crying into my tequila again this year!


For those of you who celebrate it - what's your fave dish? Do you have an epic pasta salad that will blow my mind? I *loved* making walking tacos last year, they went down a treat.
