When should (or shouldn't) we play as if the cards will break in our favour? - with Graeme Tuffnell

Hello, bridge friends ~
So often when we take lessons, we learn with hands in which things work out. If we're learning that with nine cards we should always finesse the queen, the lesson hand will almost assuredly show that happening.
But when we play on our own at the bridge club or online, we can't count on things working out like that. And when they don't, it's so hard not to feel confused or wonder if we messed things up.
A question from one of Graeme's students put this well: "With these suit combinations, when you show us how to play them, the opponents’ cards seem to be in the right place. You have not said it explicitly, but my assumption is that we have to play the cards that way hoping the cards lie in the right place. But, they won’t always, so I won’t always be able to take the requisite number of tricks. Is this correct?"
