Kick Off Summertime with Homemade Kombucha Paletas

What are Paletas?

Paletas are Mexican frozen treats made from fresh fruits or creamy ingredients. In this case, my friend Doug made some with my Pineapple Lemongrass Kombucha. If you have kids or grandkids, this will be a winner this summer.

This recipe is easy peasy!

You will need:

A BPA free Non-Toxic Popsicle Mold

Blanco Booch Artisan Raw Kombucha

Sweetener: Organic raw cane sugar or honey help to give it the right sweetness for kids and the sugar also helps the molecular structure to improve the texture of the popsicles.


Doug's Original Kombucha Paletas Recipe:

For each 3 oz popsicle, you will add 1 tsp of organic raw sugar

For 10 popsicles you will need 30 oz of kombucha

3&1/2 Tablespoons of sweetener dissolved in the kombucha.

Mix up all ingredients and pour them into the popsicle molds and freeze for at least 4-8 hours.

Doug made the ones in the picture above with Pineapple Lemongrass and they were delicious!

Lemon Zest or Blueberry Basil would also be fantastic favors for these frozen treats.

Doug also surprised me with a creamy variation.

I loved these too! These are tasty treats and I did like the creamier texture. It holds its form well and melts slower than the original recipe. My son preferred the creamy variation best. He said, "you can’t even tell this is made of kombucha." The original recipe came through with more taste of the pineapple lemongrass flavors.

Raspberry Lemongrass would be best as a creamy variation as raspberries are lowest in natural sugar and a bit tart.


I know we are adding some sugar to these popsicles and my whole mission is to keep the kombucha as low in sugar as possible thus making it as healthy as possible. Especially because many other kombucha brands have higher sugar content.

I looked at some labels on some commercial popsicles and KoolPops and Pop-Ice have a total of 21g of sugars (high fructose corn syrup) per popsicle and Skittles pops have 38g of sugar (high fructose corn syrup). Yikes!

1 tsp of organic raw cane sugar is just 4g of sugar, so I don't feel this is too terrible to offer a summer treat especially because kids are then getting 3 oz of healthy probiotics and all the other benefits of the kombucha.


Doug's Creamy Kombucha Paletas Recipe:

Make up a mixture of 1:1 ratio of half and half to sweetened condensed milk.

Doug makes up a batch of this and uses the excess cream as a healthier coffee creamer option. Smart idea!

For each 3 oz popsicle, you will add 1 tsp of organic raw sugar

1 Tablespoon of the cream mixture.

For 10 popsicles you will need 30 oz of kombucha

3&1/2 Tablespoons of sweetener dissolved in the kombucha.

3&1/2 Tablespoons of the cream mixture.

Mix up all ingredients and pour them into the popsicle molds and freeze for at least 4-8 hours.


I also thought of organic sweetened condensed coconut milk to add to the kombucha to make another creamy variation. I haven't tried that one out yet but it sounds yummy.


Remember, at Blanco Booch, we use only Texas Natural Spring Water from a protected source and organic raw cane sugar in our Kombucha.  

We go the extra mile to juice our fruits in-house for the second fermentation. 

No added filtered water or preservatives are used.
